A vegan take on an old favourite. We like to pair with homemade jam, a little tart compared to the the shop bought stuff. Try with a big dollop of vegan cream on top - delicious!
Ingredients
Scones
350g self raising flour
Pinch of salt
1tsp baking powder
3tbsp caster sugar
95g vegan butter
150ml homemade oat milk
Jam
150g frozen mixed berries
1tbsp caster sugar
1tbsp water
Method
First, make your jam. Place the frozen berries into a small saucepan with the water and heat up until the berries have melted. Then add your sugar and bring to the boil. Bubble away gently until the berries have started to break down and the jam is thickening. When reduced, take off the heat and crush any remaining large berries with a fork. Set aside to cool.
Next get started on your scones. Mix the flour, salt, baking powder and sugar in a bowl. Add the vegan butter and combine until you have fine breadcrumbs.
Add the milk to the mixture and stir until you have a smooth dough.
Dust a surface with flour and then roll out your dough until 2cm thick. Using a 7cm cutter, cut out your scones and place onto a baking paper lined tray. Make sure you leave a 2cm gap between each. Brush the top of each scone with milk.
Place your scones into the freezer for 15 minutes to firm up the scones. When in the freezer heat the oven to 220C/200C fan.
Remove from the freezer and bake for 15-20 minutes until golden brown
Serve with your jam, and a cup of tea of course.
